I am posting this in order that others may find it useful or even add their own sources for phones and parts. I hope it can become its own pinned topic for on-going updates. If you know of more, please post them here!

Of course there are those we all know of which we mention out of respect:

http://www.oldphoneworks.com/ (you must use the www on this site or you do not net the menus because it is apparently maintained by a bone head)

http://www.oldphoneshop.com/

https://www.ericofon.com/

Then there are these not so commonly known sites:

Have seen ringers , dials , etc here:
https://www.surplussales.com/Communications/

Have seen mic elements here and other WE parts like relays coils , etc
https://www.electronicsurplus.com/

modular conectors for WE 500 and 2554 types found here
https://www.newtechindustries.com/

It appears they have some Oak telephone parts here

While doing some Google searches, I ran into something interesting
https://www.surplusmaster.com/prods/telephone/dytel.htm
It seems they have some NOS phones from ITT and NT

and yet another page of theirs with even more
https://www.surplusmaster.com/prods/telephone/tele1.htm

Site design seems familiar but not the domain so wondering if it iis an alias for a different site
