newbie question on NE 500 operation

Hello all,
Just getting into the old phone hobby. My father bought me a WE chrome payphone when I was about 20. I am pushing  60 and still have it. Just built a new home so I pulled wire for a number of jacks as I thought it would be cool to start a bit of a collection.
Anyway I have a black NE 500 for my wife's office... she seems to approve.
I cleaned it up and have a dial tone but the striker hits the chimes when you dial or pick up the receiver.
Is there a way to prevent this?

Yes it's called bell tap. What you need to do is remove the housing, with the back of the set facing you look at the ringer. Between the gongs is the clapper, right below that is a small wire that sits in a notch. There is an adjustment you can do using your finger, or pencil eraser, on the end of that wire move it to a higher notch. That should solve that problem. If not try reversal of the polarity on the Jack.
