getting ready to install an extensicord but not sure how to do the cord restraint.  Do I just wrap the restraint cord arount the screw or tie a knot close to the handset hole.

Just depends on what you're installing it on. There should be an extra string other than the conductors that you can tie to whatever is inside of the deskset that will serve to take a "pull" after your cord is installed.

The AE 35 and maybe the 50 as well have a neat little steel thing below the hook switch that you tie the string to. The 40 has the clamp for the cord that presumably the string is looped around somehow. Not certain how it fastens inside the type 38 and 41 handsets though.

inside the phone seems to be fine using the clamp.  But there doesn't seem to be enough slack to install in the handset.

Slack on the string or leads? What handset is it..a type 41? (handset on AE40 and 50).
