A while back I got some great help here on how to replace a handset cord on a 500 set.

I will eventually need to change out the handset cord on my metal WE302 -- I opened up the ear piece to see how similar the technique would be, but this F1 handset does not appear to be hollow... so not sure how to run the wires up to the ear piece.

I can see three connectors going into the receiver and connecting at points on the mouth piece.. is that all there is for the older F1 handsets?

There are two wires embedded in the bakelite that go from W and R in the bottom of the handset to the receiver contacts in the top. So, you connect all 3 wires (Black, Red and White) in the bottom of the handset.
