That is all sounding really good. I'm envisaging something like this (below) on wheels, with your handy backboard to rear?

If you use the lift up gateleg workspace to left as your main work surface (plenty of chair/kneespace there) you can always add more storage drawers under the first drawer (to right) if needed (rough example mock up below).
And because the work surface to left folds down it will always be clear and ready to use.

You have probably already thought of this, but I would add two wooden 'stops' underneath the flip up worksurface to prevent the gateleg from moving out of position in either direction.

That's along the lines of what I have in mind.
I've learned if I slow down a bit, I'll think things through better and hopefully make fewer mistakes.
And as long as rain and snow now hold off a bit more, then I'll be good to get to things.
