I was cleaning the dial on my 7D, 6-58, WE 500, when I noticed the red oil or grease on the mechanism. It rinsed right off, but colored the clear plastic, and will not rinse off. Has anyone ever seen this type lubricant before on a dial ?

Dan, I have seen some small amount of red grease on one of the vertical posts---one of the 3 brass ones----where the spinning gear flings it against the post.  I've never seen as much as you have there.  Looks like someone went crazy with the stuff.

Like I mentioned the dail is dated 6-58, and is absolutely the quietest dial I have ever NOT heard. I hope I didn't screw up by removing that lube.
I use a good quality non gumming oil.
