What are the differences between a WE 309 plug and a WE 310 plug?

They differ in dimensions.

Catalog 10 (1950):
309:  3 1/16 x 1 3/32 x   9/32 x 3/8
310:  3 1/4   x 1 9/64 x 10/32 x 37/64

Thanks for the reply. Im going to assume they will only work in certain jacks, then?

They work in the jacks that are respectively compatible.  The 310 works in a 1/4" jack and the 309 works in a 3/16" jack.  The 310 goes into, as an example of many, the 242-type jack. The 309 goes into, among others, the 246-type jack. The 309 was used singly, or in jack panels and PBX's that needed high density numbers of jacks, such as the 608A & D cord boards.
